Sichuan (or Szechuan) pepper is easily near the top of our list of favourite spices.
Complex and fragrant, it is a key ingredient across much of East Asia, specifically China. It has floral notes, with hints of citrus and eucalyptus.
The most interesting part of Sichuan pepper is its mild but pleasantly numbing spiciness. It isn’t “hot” – not exactly. But, like hot, spicy food, Sichuan pepper can impact other flavours within a dish, elevating it to new heights.
Toast and grind to release the flavour, and add to sauces, slow-cooked meats, or infuse oils with it.
Remember to start slow. Sichuan is incredible but very unique, so get a taste for it first.
