Cinnamon

This might be the first spice you’ll remember from your childhood. It is common in breakfast cereals, cakes, cookies, donuts… the list is endless.

But what is more interesting is that many of us may not have ever had actual “True Cinnamon”, otherwise known as “Ceylon cinnamon”. What many of us know is actually cassia bark, or “Chinese cinnamon”. This cousin of true cinnamon is what we find in grocery store pouches.

True Ceylon cinnamon is sweeter, with a more delicate flavour than cassia cinnamon, which is spicy by comparison.

Ceylon cinnamon works with both sweet and savoury dishes, and even drinks. And it is a staple of Christmas and other wintertime holidays.

Whether used ground or whole, high-quality Ceylon cinnamon needs to be a staple in your spice cabinet.
