Black mustard is one of the three common types of mustard seeds. Where yellow and brown mustard are used in condiments, black mustard is instead used more in cooking dishes like curry or other Indian cuisine.
The flavour of black mustard is hidden within – it doesn’t have a strong aroma until it is crushed or ground. If you’re looking for a more intense flavour, dry-roast the whole seeds, grind or crush them in a mortar, and then let them soak in water for several minutes.
This pairs well with strong cheeses, braised rabbit, or fried fish.
