Annatto is known for its vibrant colour, with use dating back to the ancient Mayans, who used it as body paint. It was then used for manuscript writing in Mexico in the 16th century, and eventually became a common ingredient in colouring foods like cheddar cheese.

But its uses go further. Annatto offers a woody, peppery flavour, with notes of citrus. It pairs well with corn on the cob, many meats and fishes, and even chocolate.
