Are your spices not sticking to your meat? You need a binding agent. Our preferred binding agents are either oil or mustard, depending on the cut of meat and cooking method.

For shorter cooks, or almost any cut of chicken, we use oil. If you’re cooking with high heat, make sure you choose an oil with a high smoke point.

For longer cooks, including almost anything on the smoker, we use mustard. Any yellow mustard will do – you won’t taste anything except the spices!
