August in Ontario brings with it a cornucopia of fresh and vibrant produce, ripe and ready to be transformed into delectable desserts. Whether you’re hosting a backyard gathering or simply craving a sweet treat, these five easy-to-make desserts are sure to satisfy your palate while making the most of the season’s fresh produce.

 

Peach Parfait


There’s nothing quite like sinking your teeth into a juicy, sun-ripened Ontario peach. Turn this delectable fruit into a delightful Peach Parfait by layering sliced peaches with creamy vanilla yogurt and a sprinkle of granola. This harmonious blend of flavors and textures makes for a refreshing dessert that celebrates the essence of summer.

 

Blueberry Crumble


Ontario’s blueberry harvest peaks in August, offering a burst of sweetness in every bite. Harness the flavor of these tiny gems with a classic Blueberry Crumble. Toss the fresh blueberries with a touch of sugar, then crown them with a golden crumble made from oats, flour, butter, and brown sugar. As it bakes, the crumble becomes crispy, contrasting perfectly with the juicy blueberries beneath.

 

Strawberry Shortcake


As strawberry season continues into August, indulge in the timeless delight of Strawberry Shortcake. This dessert showcases Ontario strawberries in all their glory. Place sliced strawberries atop tender biscuits or sponge cake, and generously dollop with freshly whipped cream. Each bite is a harmonious symphony of flavors that dances on your taste buds.

 

Apple Galette


Anyone can make a simple Apple Galette that is sure to impress. Here are the simple steps:

  1. Thinly slice 3 or 4 apples, then toss the slices in 2 Tbsp of brown sugar, 1 Tbsp of lemon juice, and a healthy dash of cinnamon.
  2. Arrange the apples in layers on a sheet of flaky puff pastry. (a premade pie crust or puff pastry will do.)
  3. Sprinkle with more cinnamon and brown sugar atop the apples.
  4. Fold up the edges of the pastry over the sides the apple slices. Leave most of the apples exposed.
  5. Bake at 400°F (about 205°C) on an oiled baking sheet for about 45 minutes.

As it bakes, the apples soften and release their sweet aroma, while the pastry turns golden brown and irresistibly crisp.

 

Blueberry Compote


We’re giving the blueberry some more love with Blueberry Compote. Simmer fresh Ontario blueberries with a touch of sugar over low heat until they burst and release their vibrant juices. This compote is versatile and can be drizzled over ice cream, pancakes, waffles, or even swirled into yogurt for a burst of fruity goodness.
